Beef and Brown Rice Taco Bake

Mexican night is a regular occurrence at our house and it also happens to be one of the cuisines we enjoy most when we go out to eat. I've heard it said, "You think you have self control until they give you the free chips and salsa." That describes my family, especially me, perfectly!

I am always finding ways to spice up our Mexican meals, never relying on simply tacos alone! From burritos to enchiladas and everything in between, I have definitely found a way to incorporate our restaurant favorites into simple weeknight dinners. But nothing says easy when supper time rolls around quite like a classic casserole.

This Fiesta Taco Rice Bake recipe brings together the flavors of tacos, salsa and the side of rice all in one easy-to-make casserole. It's perfect for any busy night, or when you're craving Mexican food, but are also on a budget.

This casserole is something I like to call an "almost one pan wonder" since you have to brown the ground beef in the skillet first and there are two pans to be washed, but it's still super quick and the oven does most of the work!

Will The Rice Cook In The Casserole?

Any time I share a casserole recipe that uses dry rice, without pre-cooking it, I always get asked this question. The answer I have to give, based on my experience, is yes! I have never had an issue with the rice coming out hard or underdone, as long as a couple things are followed. First, do not skimp on any of the liquid listed in the recipe. The mixture of diced tomatoes in juice, chunky salsa and chicken broth is going to create the perfect environment for the rice to boil and cook to perfection. Next, when the casserole is covered with aluminum foil, it has to be tight to trap all the heat inside the baking dish to let the liquids get hot enough to boil.

Can I Substitute Ground Turkey For Ground Beef?

Definitely! In fact, casseroles are one of my favorite ways to make this swap without anyone even being able to tell. My other go-t0 for using ground turkey instead of ground beef is Mexican recipes because of all the other flavors used. So, this casserole is the perfect place to try it! Yes, ground turkey tends to be a little dry, but that will not be an issue here thanks to all the wet ingredients.

  • long grain rice
  • diced tomatoes
  • diced green chilies

  • chicken broth
  • taco seasoning
  • Mexican style shredded cheese
  • green onions

This Mexican inspired casserole supper is one you want and need on your regular meal rotation. On the table in about an hour, you can go from starving to smiling in almost no time, with as little effort as possible.

Best Fiesta Taco Rice Bake Tips

  • No need to pre-cook the rice. It will boil right in the casserole.
  • Instant rice will not work the same as long grain.
  • Be sure your casserole dish is covered tightly with aluminum foil. The trapped heat is what allows the liquid to get hot enough to cook the rice.
  • Ground turkey could be substituted for the beef.
  • Other topping suggestions: avocado, sour cream, tortilla strips, cilantro

Fiesta Taco Rice Bake

Ingredients

  • 1 lb ground beef
  • 1 cup chunky salsa
  • 1 (1-oz) pkg taco seasoning
  • 1 (15-oz) can corn, drained
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (4-oz) can diced green chiles
  • 1¼ cup long-grain white rice
  • 1 cup chicken broth
  • 1 (14-oz) can diced tomatoes, with juice
  • 1 cup Mexican blend shredded cheese, divided
  • 2 green onions, chopped

Directions

  1. Preheat oven to 375°F. Coat a 13 x 9-inch baking dish with nonstick cooking spray.

  2. In a large skillet cook beef and drain. Add salsa, taco seasoning, corn, beans, green chiles, rice, broth, tomatoes and ½ cup cheese. Stir well.

  3. Transfer to baking dish and cover. Bake for 50 minutes, until rice is tender. Top with remaining cheese and bake, uncovered, for 5 minutes. Top with green onions.
